dc.description.abstract | A presente dissertação tem em vista a avaliação fitoquímica e nutricional do tubérculo inhame (Dioscorea spp.) através da análise qualitativa e quantitativa da sua composição química. As amostras analisadas foram colhidas aleatoriamente, nas províncias de Maputo (Zona Verde) e Manica (Macate e Gondola). As amostras foram submetidas a diferentes métodos de análise química, dentre eles “GC-MS” (para identificação de metabólitos secundários e ácidos orgânicos), a gravimetria (para determinação de humidade, cinzas e gorduras), método de Lane-Eynon (açúcares), método de Kjeldahl (proteínas), FC (Na e K), “FAAS” (Co, Cr, Cu, Fe, Mg, Mn e Zn) e “MAS” (P). A análise qualitativa das amostras foi feita no LDQA-UJ, de onde foi possível fazer a identificação de α-sitosterol (metabólito secundário) e ácidos orgânicos (cítrico, oleico, mandélico e ftálico) através da comparação dos espectros de massa das soluções-amostra e os espectros teóricos fornecidos pelo instrumento. Para as análises quantitativas as amostras foram preparadas com réplicas e as determinações foram feitas em três laboratórios: LDQA-UJ, LS-IIAM e LCQ-CIDE. Os teores foram apresentados na forma de percentagem (para humidade, cinzas, gorduras, açúcares e proteínas) e em ppm (para os minerais). Os teores obtidos variaram de: 5,54 a 8,46% para proteínas; 1,09 a 1,24% para gorduras; 3,52 a 5,10% para açúcares; 18,23 a 6090 ppm para minerais; 20,64 a 21,38% para humidade e 29,08 a 34,49% para cinzas. Para os elementos determinados em dois laboratórios, o teste t de comparação de dois conjuntos de dados revelou, na sua maioria, não existirem diferenças significativas entre os valores obtidos. Através da “ANOVA” notou-se que a mudança do local de amostragem influencia significativamente nos teores de gorduras, açúcares, proteínas, P, Zn, Cr, Mg, Mn e Na e não apresenta influência significativa nos teores de humidade, cinzas, Co, Cu, Fe e K. | en_US |

dc.description.resumo | The present dissertation aims at the phytochemical and nutritional evaluation of the yam tuber (Dioscorea spp.) Through qualitative and quantitative analysis of its chemical composition. The analyzed samples were collected randomly, in the provinces of Maputo (Zona Verde) and Manica (Macate and Gondola). The samples were submitted to different methods of chemical analysis, among them “GC-MS” (for identification of secondary metabolites and organic acids), gravimetry (for determination of moisture, ashes and fats), Lane-Eynon method (sugars), method of Kjeldahl (proteins), FC (Na and K), “FAAS” (Co, Cr, Cu, Fe, Mg, Mn and Zn) and “MAS” (P). The qualitative analysis of the samples was made at LDQA-UJ, from where it was possible to make the identification of α-sitosterol (secondary metabolite) and organic acids (citric, oleic, mandelic and phthalic) by comparing the mass spectra of the sample solutions and the theoretical spectra provided by the instrument. For quantitative analyzes, samples were prepared with replicates and the determinations were performed in three laboratories: LDQA-UJ, LS-IIAM and LCQ-CIDE. The levels were presented as a percentage (for moisture, ashes, fats, sugars and proteins) and in ppm (for minerals). The levels obtained ranged from: 5.54 to 8.46% for proteins; 1.09 to 1.24% for fats; 3.52 to 5.10% for sugars; 18.23 to 6090 ppm for minerals; 20.64 to 21.38% for humidity and 29.08 to 34.49% for ashes. For the elements determined in two laboratories, the t test of comparison of two sets Most of the data revealed that there were no significant differences between the values obtained. Through “ANOVA” it was noted that the change of the sampling location influences significantly in the levels of fats, sugars, proteins, P, Zn, Cr, Mg, Mn and Na and not has a significant influence on moisture, ash, Co, Cu, Fe and K. | en_US |
